Old Friends KIMCHI is a Polish brand founded by people who have been creating food with passion for years, putting their whole heart into it. Mira Klepacka, Sebastian Twarogal – completely different from each other, but they share their love for good food and kimchi.
For us, KIMCHI is more than just Korean sauerkraut. It is the wealth of Asian culture, an inseparable element of tradition, but also an ingredient that refreshes everyday cuisine and commands its expression. Old Friends KIMCHI expresses who we are.
WHAT IS KIMCHI?
Kimchi is, in short, a traditional Korean sauerkraut, which works great both as an addition to dishes and as an independent snack. The first versions of kimchi were created in China and Korea 2,000 years ago, in response to the need for long-term use of available, seasonal vegetables. Currently, there are over 200 different varieties of kimchi in Korea alone. They differ from each other in the use of blends of spices and vegetable additives that ferment with the cabbage.
In 2013, kimchi and kim-jang, the traditional method of preparing kimchi, were entered on the UNESCO Representative List of the Intangible Cultural Heritage.
WHY KIMCHI?
Kimchi is low in calories, improves metabolism and is considered one of the healthiest foods in the world. It contains vitamins A, B1, B2 and C, as well as iron and calcium. Thanks to fermentation and no pasteurization, it is rich in lactic acid bacteria Lactobacillus, which feed the bacterial flora of our digestive tract, build immunity, influence digestion and absorption of beneficial substances for the body, reduce the occurrence of allergies and skin diseases, and support weight regulation and proper PH. No wonder that for Koreans, kimchi is an inseparable addition to any meal.
THE BEGINNINGS
It all started 7 years ago with Sebastian and his kimchi recipe perfected. Then came investors with an idea to create the first nationwide brand KIMCHIi. This is how Old Friends Kimchi was born – a manufacture combining taste, tradition and local cuisine. Our main product is and will always be kimchi because it is a product that reflects what we are looking for in food, namely: seasonality, simplicity, nutrition and balanced flavor.
